Default Utility That Will Autosave Flight Every Minute?

Is there any FS2004 utility that would automatically save off your position,
aircraft type, and instrument settings every minute? I often find myself
wanting to go back one to five minutes in a flight and attempting to do a
maneuver several different times. I often do not know in advance I will
want to do this, so I do not save the flight in progress. I really wish
Microsoft had added such a capability.

There is a free add-on called AutoSave, available from
http://www.schiratti.com/dowson.html which should do what you want.

complain how fs9 is slow and jerky it's not saving all that info without
giving your resources a hit

If you see a performance degradation because of Autosave you shouldn't
be running FS9 on that system anyway. Only a really, really, really
marginal system would take any sort of a "hit".
